Toddler meringues!

Here is a recipe I stole from Chelsea sugar. I didn't use blue food colouring or whipped cream

Ingredients

6 egg whites
2 cups Chelsea Caster Sugar
1 tsp vanilla essence
1 tsp white vinegar 
1 tsp cornflour
Pink food colouring
Blue food colouring
Whipped cream to serve or Dairy Free Berry Sauce 

Method
In a large bowl (not plastic) beat egg whites until soft peaks form. Gradually, add the Caster sugar very slowly. The mixture should be getting thick with each addition. The whole sugar adding process should take at least 10 minutes. Beat in the essence, vinegar and cornflour
Put half of the mixture into a separate bowl and, using a few drops of food colouring, colour one bowl pink and the other blue. Spoon mixture out into little 'blobs' onto abaking paper covered tray. Bake in a low 110°C - 120°C oven for 45 minutes. 
The meringues should lift off the paper easily. 
Cool on a wire rack and jam together with whipped cream, when cold.

Coconut ice

Today I needed a bit of coconut 

So I made coconut cake! Jokes! I made a super duper serving of red coconut ice

Ingredients

100g butter
1 cup milk
6 level cups of icing sugar
1tsp salt
1 cup dessicated coconut 
2 tsp coconut essence
4 drops of red food colouring (or any other coulor) 

Method
Chuck the butter, milk, icing sugar and salt into a medium sized saucepan (pot)
Heat gently until all that sugar dissolves into the depths of the pot
Bring it to the boil
Keep the heat to maintain the boil
Stir occasionally until it reaches the softball stage
 Blend in the cocunut and the cocunut Essence
Remove the mix off the heat
Let it cool for 6-9 minutes
Divide the mix in half 
Put them in two different containers
Add food colouring to one 
Mix it up till it looks like a goopier version of blood
Now put the two mixes together (forever)
Leave em be in the fridge for a day 
Once you have taken them out, take out a bowl and put in 1 cup of dessicated cocunut
Mush the mixture into a few blobs and roll them around in the cocunut till they look like little clouds

P.S don't forget to line and grease the containers that you used

Ginger bread people

Today I was out of a lot of ingredients and I found a ready made mixture for gingerbread
And all I can say is that it was yum and easy 
The brand I used was Greens
Here's what they look like


I already ate quite a lot and I also gave a few to my friends so their are only a few left
I rate them 7/10 because they are quite dry/plain
