FANCY ROCKY ROAD

Mummy wanted something fancy so I made white chocolate roccky road

It includes freeze dried strawberries, sweetend dried cranberries, and sponges marshmallows.

Ingredients

460 g white chocolate 
50 g freeze dried strawberries
Half a cup of dried cranberries
Half a cup of sliced marshmallows


Method

1. Heat chocolate in any way until creamy and smooth
2. Pour into large bowl then mix in all the ingredients slowly
3. Place in a gressed dish, next you place in the fridge until set
4. Enjoy with warm glass of milk

Shrew berry biscuits

Yesterday I made these delicious biscuits and it's basically shortbread and rasberry jam!

125g butter, softened 
1/2 cup caster sugar 
1 tsp vanilla essence 
1 egg
1 1/2 cups flour 
Pinch of salt 
1 tsp baking powder 
1/2 cup raspberry jam
1 Tbsp water

1. Heat oven to 180* c. Line one baking tray with nonstick baking paper. Place butter, sugar and vanilla in a bowl and beat until thick and pale, then beat in egg.

2. Sift flour, salt, water and baking powder into the butter mixture and stir to combine. Turn mixture out onto a board and knead lightly to bring together as a firm dough. Wrap dough in plastic wrap and chill for 10 minutes.

3. on a lightly floured surface, roll out dough to 3mm thick. Cut out any shape with a biscuit cutter and place on prepared baking tray. Cut out and remove smaller circles from the centre of half the biscuit circles.

4. Bake for 15 to 20 minutes, then remove to a wire rack to cool. Sandwich biscuits together with raspberry jam and leave to set.

Here's how mine turned out. I also had a helper with me and she helped me soo much!

P.S I cut them in half so we had more bikkies.

My tasters enjoyed them too!

No Yeast biscuit texture bread! 😊

It's 8:00 and I need to bake something then idealise I have a loaf tin!

I ran out of yeast sadly 

Ingredients:

1/3 cup of extra virgin olive oil

3 cups all purpose flour (I used whole wheat flour)

1 tablespoon baking powder

1 teaspoon salt, preferably sea salt1 cup of warm water

Method

  1. Heat the oven to 375 and grease an oven proof dish or skillet – 8-9″ is probably best.
  2. Put the flour, baking powder, and salt in a food processor. Turn on the machine and slowly add the olive oil and most of the water.
  3. Process for 30 seconds. The dough should roll into a ball and barely sticky.  If it hasn’t come together yet, add remaining water a tablespoon at a time, processing for 5 seconds each time.  If you want to add herbs, cheese, whatever, to the dough, do it now.
  4. Put the dough into the pan and flatten it until the dough fits to the edges.  Flip and press again. Cover tightly with foil and bake.
  5. After 20 minutes, remove the foil and sprinkle the top with coarse seat salt and herbs (if you like). Bake for another 20 minutes. The top will be golden and it will spring back when touched.
  6. I used load pans and added olive oil plus some olive oil to dip and they were pretty good

Toddler meringues!

Here is a recipe I stole from Chelsea sugar. I didn't use blue food colouring or whipped cream

Ingredients

6 egg whites
2 cups Chelsea Caster Sugar
1 tsp vanilla essence
1 tsp white vinegar 
1 tsp cornflour
Pink food colouring
Blue food colouring
Whipped cream to serve or Dairy Free Berry Sauce 

Method
In a large bowl (not plastic) beat egg whites until soft peaks form. Gradually, add the Caster sugar very slowly. The mixture should be getting thick with each addition. The whole sugar adding process should take at least 10 minutes. Beat in the essence, vinegar and cornflour
Put half of the mixture into a separate bowl and, using a few drops of food colouring, colour one bowl pink and the other blue. Spoon mixture out into little 'blobs' onto abaking paper covered tray. Bake in a low 110°C - 120°C oven for 45 minutes. 
The meringues should lift off the paper easily. 
Cool on a wire rack and jam together with whipped cream, when cold.

Coconut ice

Today I needed a bit of coconut 

So I made coconut cake! Jokes! I made a super duper serving of red coconut ice

Ingredients

100g butter
1 cup milk
6 level cups of icing sugar
1tsp salt
1 cup dessicated coconut 
2 tsp coconut essence
4 drops of red food colouring (or any other coulor) 

Method
Chuck the butter, milk, icing sugar and salt into a medium sized saucepan (pot)
Heat gently until all that sugar dissolves into the depths of the pot
Bring it to the boil
Keep the heat to maintain the boil
Stir occasionally until it reaches the softball stage
 Blend in the cocunut and the cocunut Essence
Remove the mix off the heat
Let it cool for 6-9 minutes
Divide the mix in half 
Put them in two different containers
Add food colouring to one 
Mix it up till it looks like a goopier version of blood
Now put the two mixes together (forever)
Leave em be in the fridge for a day 
Once you have taken them out, take out a bowl and put in 1 cup of dessicated cocunut
Mush the mixture into a few blobs and roll them around in the cocunut till they look like little clouds

P.S don't forget to line and grease the containers that you used

Ginger bread people

Today I was out of a lot of ingredients and I found a ready made mixture for gingerbread
And all I can say is that it was yum and easy 
The brand I used was Greens
Here's what they look like


I already ate quite a lot and I also gave a few to my friends so their are only a few left
I rate them 7/10 because they are quite dry/plain
